TASTE: It morphs in the mouth, ranging from sweet to sour to tangy to bitter. Artisan Larrian Gillespie gets her fruit from local orchards and the Santa Monica Farmer’s Market.

TEXTURE: Small chunks of peel in an easily spreadable, medium-set jelly.

BEST USE: Between layers of a cake. $12 for 6 ounces

Meyer Lemon Myers’s Rum Marmalade
