Barberries are a small, juiceless scarlet berries highly prized by the Egyptians and thought to be part of the crown of thorns worn by Christ. These berries are high in malic acid and fiber.
We make this jam by using apple cider vinegar, giving the berries a tantalizing bite against the sweetness of just enough sugar.Try it on toast, then graduate to spreading it on a sandwich for that special treat.
